Nectarine Lacto-Blueberry Galette
We added sourdough to our whole wheat pastry cream and let it ferment in the fridge for several days, sliced up our favorite nectarines (tangy and honey-sweet Red Golds from Martin Family Orchards) and topped them with one of our favorite ferments: lacto-fermented blueberries, which turns some of the blueberry sugars into unique salty and acidic flavors. Finished with some fresh lemon zest to tie the room together. We're super psyched on this one.
