Cairn Spring Mill Edison T85 (All-Purpose) Flour - Grown at Carbondale Farms in Milton-Freewater, Oregon and named for a town just down the road from the mill this is a nutty, buttery all purpose flour with a beautiful golden color. Use whenever a recipe calls for All-Purpose flour. Even though it is lightly colored, this flour has slightly more bran and germ than a typical All-Purpose Flour, so it needs an extra 5% hydration. For every cup of water that your recipe calls for, add an extra tablespoon.
Cairn Spring Mill Whole Grain Expresso T85 (Whole Wheat) Flour - The whole grain, unsifted version of Cairn Spring’s flagship organic bread flour. A cross between Express and Yecora Rojo wheats, this flour contains all of the wheat berry, giving a more flavorful and nutritious flour. Use wherever a recipe calls for whole wheat flour.
