Wanted to share a tidbit I learned from a family friend about garlic scapes as pesto. A classic italian pesto recipe that blew my mind. Super simple, but I tried it and can't get enough.
- 1 organic bunch garlic scapes (Newaukum Valley Farm)
- 1 organic lemon (CA)
- 1 tablespoon sea salt: roughly 20g on a scale
All you need is garlic scapes, salt, and lemon. For a standard bunch of garlic scapes, about 1 lemon and a tablespoon or so of salt. Blend in a food processor until smooth. That's it -- no cookstep, and it's garlicky, bright, and outstanding on pizza, pasta, you name it.
